Down Hall Hotel and Spa is an exclusive venue, nestled in the Essex countryside near the town of Bishops Stortford. With 100 rooms, a spa and more than 100 acres of grounds, it is an idyllic site, loved by visitors for its facilities and sense of escape.
The Hall wanted to introduce new audiences to its brand by creating a musical event in its grounds that had all the trappings of a festival, but with a luxury, Down Hall twist.
The Live at Down Hall event featuring Jools Holland and James Morrison meant that 4,000 customers would be descending on the beautiful site, all needing to be fed.
Down Hall Deputy Manager, William Lyons, turned to PKL to supply the infrastructure his catering team needed to support the event.
A PKL Project Manager visited the site within days of the initial enquiry. They toured the site with Mr Lyons and the hotel’s head chef to create a kitchen plan perfect for the large-scale event.
PKL provided kitchen plans to suit the event’s planned marquees. This plan provided a structure for the teams preparing the grounds, and helped the marquee installation teams to work quickly and efficiently.
Mr Lyons said: “It was vital for us not only to have a supplier that could provide a kitchen, but that we could build a relationship with them as we developed the offer we wanted for Live at Down Hall.

The kitchen PKL supplied allowed Down Hall to produce four distinct offers for their customers, giving the event a luxury feel, whilst still maintaining a smooth and efficient kitchen process.
