Modular Kitchen Delivers Modern Kitchen & Dining for Scottish Primary School

Beauly Primary, part of Highland Council, is a community-focused school dedicated to helping every pupil reach their potential. Welcoming children aged 4-12 across 7 mainstream classes with a dedicated a nursery for 3 and 4-year-olds, the school plays an important role in supporting local families and shaping young lives through primary education.

After decades of use, the school’s original kitchen from the 1960s was no longer fit for purpose. Cramped, outdated and unable to meet the catering needs of its team or pupils, Beauly Primary recognised the need for a complete new kitchen and turned to PKL to provide a modern solution that could meet daily demand with greater efficiency, comfort, and reliability while enhancing the mealtime experience for pupils.

The Challenge

The catering team had been working in a kitchen that had served the school for over 60 years. The original facility, housed within the main school building, was limiting what staff could achieve each day. Ageing equipment was struggling to keep pace with the nutritional demands of modern school catering, making it difficult to cook efficiently or produce food at the necessary volume and speed.

With limited space, a poor layout, and outdated decor, the environment was far from ideal for either staff or pupils. The dated facilities also created a dark and uninviting atmosphere that didn’t encourage children to enjoy mealtimes or spend time socialising together.

As pupil numbers grew and the scope of school meals widened, the existing kitchen simply couldn’t support serving 80 covers within the school, 16 nursery pupils on-site, and a further 20 children in a nearby private nursery. The school needed a modern, permanent facility that could be delivered quickly and installed with minimal disruption, ensuring daily catering operations could continue smoothly throughout the transition.

Perhaps for many an underestimated challenge, the school also had practical concerns that moving to modern environment with new technology would bring a steep learning curve for the catering team. Requiring new training that without the right support, could risk disrupting daily meal service.

The Solution

PKL delivered Beauly Primary’s new modular kitchen and dining facility in just four weeks from delivery to completion. The 190sqm building, comprising a 95sqm kitchen and 95sqm dining space, arrived preassembled and was installed with minimal disruption to the school. Built offsite and constructed to adhere with Scottish building regulations, the facility was completed quickly and efficiently, providing a high-quality, permanent solution in a fraction of the time a traditional build would have required.

Inhouse kitchen designers at PKL collaborated with the catering team to understand their daily service routines and operational challenges, creating a new layout and efficient workflows for staff to prepare meals quickly and comfortably. Whilst modern equipment across production, refrigeration, dishwashing, servery, and preparation brought new levels of convenience to day-to-day operations, eliminating bottlenecks caused by elongated cooking times and limited hot holding capacity.

The adjoining dining space was designed to complement the new kitchen, creating a bright and uplifting environment where pupils can enjoy mealtimes together. With ample natural light and improved acoustics, the area feels calm and spacious, making mealtimes a welcome part of the day for both pupils and staff.

To support a smooth transition to the new space, PKL also provided hands-on equipment training and guidance to help Beauly Primary’s catering team familiarise themselves with the new equipment and layout. This collaborative approach meant the team could adapt without risking disruption to daily meal service, embedding the benefits of a more advanced, comfortable, and efficient kitchen from the very start.

Diana Mearns, Assistant Cook at Beauly Primary, shared her experience:

“It’s been a great experience. The children are much happier coming in for meals now and being in a nicer environment. It is a much nicer facility to work in compared to what we had, and everything flows with ease now.”

The Result

The upgraded facilities have transformed school lunchtimes from a poorly performing and purely functional routine into an enjoyable part of the day, reinforcing Beauly Primary’s commitment to pupil wellbeing and community.

Catering staff now work in a spacious, bright, and well-equipped kitchen that can deliver a range of meals efficiently and at scale to meet the needs of every child. The expanded capacity ensures the school can continue to meet growing demand, futureproofing its ability to serve pupils on-site and in the wider community for years to come.

Pupils now benefit from a welcoming dining space that has become a highlight of the school day, encouraging positive relationships with food and shared mealtimes. The modern environment has had a noticeable positive impact on both staff morale and pupil enjoyment. As Diana notes, the children are happier and more engaged with mealtimes, and the kitchen team appreciates the improved workflows and working conditions.

A modular kitchen solution from PKL has given Beauly Primary a facility that reflects the school’s values of achievement, care, and community. A significant step forward from a 1960s setup, setting the stage for many years of nourishing mealtimes.
